We all appreciate side dishes that are not only delicious but also easy to prepare, especially when they help us meet our daily vegetable quota. My personal favorite, and perhaps the simplest of them all, is this roasted Parmesan asparagus.


These vibrant asparagus spears are lovingly coated with grated Parmesan cheese, aromatic minced garlic, a hint of zesty lemon juice, and a drizzle of olive oil. They are then roasted to perfection, resulting in a dish that's wonderfully crisp-tender, with every bite bursting with flavor.


Pair this uncomplicated yet delectable side with a perfectly cooked slice of steak.

The robust and savory flavors of the steak complement the freshness and zest of the asparagus beautifully, creating a culinary symphony on your plate.


Side dish ingredients for the Stake

  • 300g Organic Ribeye Beef Steak

  • 400 g pound asparagus

  • 2 tablespoons olive oil

  • 50 g finely grated Parmesan cheese

  • 2 cloves garlic, minced

  • 50 g tosted almonds

  • Juice of 1 medium lemon (about 2 tablespoons)

  • 1/2 teaspoon kosher salt (middle size of salt)

  • 1/4 teaspoon freshly ground black pepper


Directions

  • Position an oven rack in the middle and preheat your oven to 425ºF. Line a rimmed baking sheet with parchment paper for easy cleanup.

  • Trim the tough ends from 1 pound of fresh asparagus and place them on the prepared baking sheet.

  • Now, it's time to work your culinary magic. Begin by finely grating 1/2 ounce of Parmesan cheese (about 1/4 cup when packed). Next, mince 2 garlic cloves and evenly sprinkle them over the asparagus. Squeeze the zesty juice of half a medium lemon (approximately 1 1/2 tablespoons) all over the asparagus. To bring it all together, drizzle 2 tablespoons of olive oil, then sprinkle 1/2 teaspoon of kosher salt, 1/4 teaspoon of freshly ground black pepper, and half of the grated Parmesan. Give it all a good toss to coat the asparagus thoroughly.

  • Arrange the asparagus in a single, inviting layer on the baking sheet. To make this dish even more delightful, a, mix the asparagus with toasted almond slices b, sprinkle the remaining Parmesan over the top. Now, let the oven do its work. Roast the asparagus until they reach that ideal crisp-tender state, typically around 10 to 15 minutes.


How to toast Almonds

Over the past few months I have toasted pounds of sliced almonds to have on hand. Toasting them stove top in a skillet is quick and easy. I do love quick and easy, don’t you? Warm a bit of butter or coconut oil over medium heat, toss in the sliced almonds, add a pinch or two of salt, stir it altogether and continue to stir occasionally until almonds are fragrant and golden. Depending on the amount and size of pan, it should only take 5 minutes or so to toast. Maybe less.
