Steak with Balsamic-Roasted Cherry Tomatoes and Garlic Roasted Green Beans

Start with the Balsamic-Roasted Cherry Tomatoes

  • 2 pounds cherry tomatoes

  • 2 cloves garlic, minced

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons olive oil

  • Salt and freshly ground black pepper, to taste

  • 1 tablespoon chopped fresh oregano leaves



Prepare the Balsamic-Roasted Cherry Tomatoes

  • Preheat your oven to 400°F (200°C).

  • In a large mixing bowl, combine the cherry tomatoes, minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Toss everything together until the tomatoes are well coated.

  • Spread the tomatoes in a single layer on a baking sheet.

  • Roast in the preheated oven for about 20-25 minutes or until the tomatoes begin to blister and burst, and the juices are caramelized.

  • Remove from the oven and sprinkle with chopped fresh oregano. Set aside.

Go with Garlic Roasted Green Beans

  • 2 tablespoons unsalted butter

  • 1 pound fresh green beans, trimmed

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon thick flakes of freshly ground black pepper (or use regular black pepper)



Prepare the Garlic Roasted Green Beans

  • In a large skillet over medium heat, melt the unsalted butter.

  • Add the trimmed green beans and sauté for about 5-7 minutes until they start to become tender and slightly browned.

  • Season the green beans with onion powder, garlic powder, and freshly ground black pepper. Continue to sauté for an additional 2-3 minutes until they reach your desired level of crispiness. Remove from heat and set aside.

For the Steak

  • New York strip steaks (or your preferred steak cut)

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 2 sprigs fresh rosemary

Cook the Steak

  • Season the steaks generously with salt and freshly ground black pepper on both sides.

  • In a large skillet over medium-high heat, heat the olive oil. Add the minced garlic and rosemary sprigs (if using) and cook for about 1 minute until fragrant.

  • Add the seasoned steaks to the skillet and cook to your desired level of doneness, typically 4-5 minutes per side for medium-rare (adjust cooking time based on your preference).

  • Remove the steaks from the skillet and let them rest for a few minutes before slicing.



Serve

  • Slice the rested steaks and arrange them on plates.

  • Serve the steak alongside the Balsamic-Roasted Cherry Tomatoes and Garlic Roasted Green Beans.
